儿时记忆中的食物。。。</h4>

<a name='more'></a>看到传统糕点就会想起我那手艺非常了得的阿姨,什么糕点都难不倒她。。<br />

记得小时候,每逢农历初一、十五或者任何喜庆庆节日都会有人特地向阿姨订购糕点,阿姨总是三两下就能完成那些惊人的订单。。不得不佩服她。阿姨很坚持使用传统的方法来制作糕点,我记得她都是用材火窑灶来蒸这些糕点的,那大竹篮总是几层几层的叠得高高,一次就能蒸出几十个红龟粿及其他糕粿了。当时还小体会不到大人们制作糕点背后的辛劳,也因为是随时都能吃到的食物所以也没特别的喜爱。。<br />

如今长大了,阿姨也过世。。。也很少机会吃到那种古早味的糕点了,如今的糕点制作多数都被机械化了,味道和口感都比不上传统程序制作出来的好了。现在才觉得小时候吃着阿姨做的糕点是件很幸福的事~<br />

酵母溶于清水内,拌均。干净的香蕉叶用热水烫软,剪成适合大小的块状。</div>

面粉,糯米粉,细砂糖,紫薯泥和酵母水,混合均匀搓成团(水分慢慢加入)。</div>

手掌抹上油,把面团直接分成50g的小团,搓圆。</div>

把圆团放在香蕉叶上,用掌心轻压按扁,发酵25-30分钟。</div>

发酵好的喜粄,用手轻轻按一按,表面有弹性,就可以煮开蒸锅里的水,水滚后放入喜粄,中火蒸12分钟,马上熄火<span style="color: red; font-size: xx-small;">(不要马上取出锅里的喜粄)</span>。</div>

久违的北海道蛋糕。。。</div>

以前常常会做这蛋糕,那柔软的蛋糕配上吃起来有点像冰淇凌的内陷在配搭一些水果,整个组合很清新,吃起来一点都不会腻。</div>

做法:</div>

1. 牛油,奶油芝士,糖,炼奶和香草精打至变奶白色(约10分钟)。</div>

2. 分次加入蛋黄,拌打至均匀。搁置备用。</div>

3. 在另一干净盆中把蛋白,糖和塔塔粉以高速拌打至发或硬性发泡,大约5-7分钟。</div>

4. 把粉料过筛,拌入(2)。</div>

5. 再把(4)拌入打发的蛋白霜内,拌均。</div>

6. 把面糊分成两份,一份原味。</div>

8. 烤炉预热,7寸方,盘底部刷上牛油,铺上两层蛋糕纸,,放70g的原味面糊,上火180度,烤大约7分钟。(我的烘炉190C)</div>

9. 然后拿出,稍微用压板轻轻压蛋糕的表面,这样继续做,一层原味,一层香兰味,直到烤完为止。</div>

11. 最后一层用上火烘5分钟然后上下火烤10分钟至上色。 出炉后放凉,切片。</div>

盐 …………… 少许<span class="text_exposed_show" style="display: inline;"><br />幼糖 ………… 40g<br />玉米油 ……… 80g<br />班兰汁 ……… 120g<br />自发面粉 …… 150g<br />材料B:<br />蛋白 ………… 5个<br />塔塔粉 ……… 1/8tsp<br />幼糖 ………… 50g<br />做法:<br />1)将蛋黄,盐和砂糖用打蛋器搅拌至发白,然後加入班兰汁及粟米油继续搅拌均匀。<br />2)加入筛好的自发面粉,轻轻搅拌均匀。<br />3)在另外一个碗中用搅拌机打发蛋白至很多泡泡,然後加入塔塔粉继续打,将砂糖分3次慢慢加入,打到蛋白倒扣都不会掉下来的程度。<br />4)将1/3蛋白加入蛋黄混合物里面,用橡皮刮刀轻轻搅拌,然後倒入剩余的蛋白继续轻轻搅拌混合均匀。<br />5)预热烤箱,以150度烘烤30分钟左右。<br />6)出炉后立即倒扣模子,直到冷却方可切开享用。</span></div>

原本普通的包子只要花点心思,就能成功掳获三只小坏蛋了。。。<br />
虽然蛮耗时间滴,可是看到小孩们满怀惊喜的吃着包子,一切都值得啦>.<<br />

食谱与做法~<br />
<br />
包粉 250克<br />
冰水 135克<br />
酵母 3克<br />
白糖 15克<br />
白油 10克<br />
<br />
内陷:kaya适量<br />
<br />
1.把所有材料揉成光滑的面团,静置15分钟。<br />
2.取一小部分面团,分别加入黑巧克力粉(做成眼睛与胡子),粉红色素一小滴(做成头饰),黄色(做成鼻子)备用。<br />
3.把白面团揉成长条状,平均分割成12份揉圆,休面5分钟。<br />
4.包入适量kaya馅料,用饼干模型印出吉蒂猫的脸部轮廓,把之前做好的装饰刷上一点水放在包子面上。重覆做完。<br />
